Skinny Extra Dark Chocolate Chip Nana Muffins

Is your mouth watering yet?

If it isn’t, just wait til these babies are baking up nice and golden in the oven. Your house will smell like heaven!

I procured this skinny muffin recipe from Ambitious Kitchen, but naturally adapted it as I always do, cutting the sugar factor just a bit.

*I have now been almost completely dairy-free for 8 months and feel so much better! So my ingredients will reflect that (except for the choc chips because it was all I had on hand)

What you need:  

 1 1/2 cup unbleached all-purpose flour

*The original recipe called for whole wheat pastry flour or white whole wheat flour (I suppose you could put some quick oats in a blender or a food processor to up the grains if you so desire)

1 tsp baking soda
1/4 tsp salt
3 ripe bananas
1/4 cup raw honey
1 tbsp coconut oil (or olive oil if you don’t have coconut)
1 egg (hope yours is free range too!)
1 tbsp cashew milk (use any you choose)
1/2 cup extra dark chocolate chips
1/2 avocado (you can use 1/2c nonfat plain greek yogurt or applesauce if you prefer)
Couple shakes of cinnamon

Preheat oven to 350 degrees

Spray muffin tin- I butter my muffin tin for a yummy flavor, but an olive oil or butter spray will work.

In a medium bowl, whisk together flour, baking soda and salt.

Add bananas, honey, oil, egg, milk and 1/2 an avocado to a blender. Blend until it’s smooth and creamy.

*Using an avocado gives you all its amazing health benefits as well as making your baked goods super moist! (That word is gross, but it’s true!)

Add wet ingredients and chocolate chips to dry ingredients and mix until just combined. *Be careful not to overmix or it’ll ruin the batter consistency

Ladle batter all the way to the top into the muffin tin. Using a ladle makes things easiest with batter I find.  

This measurement only made 11 muffins for some reason 😂  So if this happens to you, just fill empty tin(s) with water before baking. It keeps things even. Cool huh?

Bake for 20-25 minutes

Mine were ready after 22 minutes, but make sure to test them by inserting a toothpick. If it comes out clean you’re gravy!

Let muffins cool for 5 minutes and then remove and transfer to a wire rack to finish cooling.
